About the Event
The foraging course will be led by Henno Matzen who is an organic farmer, chef, and forager.Henno has spent several years mastering the flavors of wild plants and experimenting with wild fermentation and preservation. He has traveled around the world as an organic farmer, learned from the legendary forager Roland Rittman and worked in renowned kitchens such as Dragsholm Slot and Stedsans in the Woods.Through guided forest walks, Henno will introduce you to the abundance of wild and edible plants. He will teach you his intuitive and hands-on approach to pick and identify wild mushrooms, fruits, herbs, roots, and berries.
Cooking on Fire
The outdoor cooking class will be taught by Nicolai Tram who will share his knowledge and experience in cooking with fire. His course will give you a practical introduction to outdoor cooking focusing on mastering the perfect campfire, the nine lives of the fire and experimenting with different cooking methods using ashes, embers, stones, and simple equipment.Together with Nicolai, we will transform the collaborative harvest into a light vegetarian lunch that we will eat together around the fire.Children are more than welcome on this experience, and both Henno and Nicolai speaks Swedish, English and Danish
